There is a guy that i noticed doesn't get on the facebook chat but he is posting comments on facebook. Is there a way of appearing offline for just one person of the facebook chat or is his facebook weird?

he's probably using his cellphone or a friends cellphone to get on... some cellphones don't have the availability to go on chat or else he switched it off

1) he IS online, all he's doing is where the chat box is, he's just putting 'go offline' for this.
or 2) he could be getting text messages from the listed friends he wants, and just replies when he texts back to the facebook number sent to him, but this ones more complicated, its most likly the first one i told you about
You can appear to be offline for chat too, just click your chatbox, click options and then put offline.
Your still online, and do anything else on facebook, but its just that your friends wont be able to talk to you through chat because your offline for chat.

They are most likely using Facebook Mobile, or Facebook is glitching out.

He could be using His cellphone(You recieve notifications from Facebook, to your cellphone and just reply to answer)
Or he turned off his chat
