I added a friend on youtube as one of my Contacts before, and so they show up on my contact list. Does this mean they added me back? Or is it possible to keep somebody in your Contacts list without needing them to accept your contact request (like Facebook)?

Yes I think you answered your own question. You do not receive a notification if or when your contact request was accepted. Hope this helped.
