I'm starting a website and looking at different facebook "like" button options and was wondering if there is a button that won't display the number of people who like it next to it or after you click it. The "you like this" is fine to appear after they click just not the actual number of likes. I'm worried that some people wont want to follow my blog or like my page because there arent enough facebook "likes"

Ok I get it but then what would it say? "someone likes this" I think it's better to leave it how it is. Your blog will grow over time. Post about your blog all over and it will get many likes I'm sure. Also when you do get many "likes" then people won't be able to see how popular your blog is.
