If I tweet a celebrity, will they be able to see my tweet if my profile is private?? I only want people to be able to see my profile if they follow me and be able to see my tweets only if they are mentioned in them...

Yes, they will be able to see it.
Following someone means you can see their tweets/re-tweets on your twitter home page, but if a tweet is addressed to you, or mentions you, you can read it (you'll receive an email notification, or you can see it in the "mentions" category) and you can reply no matter if you're following that person or not and regardless of the "private" status of the profile.

Yes, even if your profile is private, if it is addressed to them they will be able to see it in their 'mentions' section.
