Most of them do work. Like Who Unfollowed Me [1] they just require an initial synchronisation with your account then you come back periodically to check what has changed.
None of these services will work without an initial synchronisation, twitter doesn't keep records of who followed and unfollowed you. These sites just copy the list of followers and then let you check at a future date to see what changes have occurred.
If you wanted for example to see who unfollowed you in the last week or so you won't be able to. You would need to have been registered, or synced with one of these services before the person unfollowed you.
