I've heard that background checks like Lexisnexis can find someone's employment history. Can they also find profits made from investing in the stock market?

I doubt it. Your profits should be declared to the Inland Revenue so it is possible these records are available to the credit agencies.

most likely not
a background check will include
County Criminal Records Check (Felony & Misdemeanor)
Federal Criminal Records Check
Education Verification
Employment History Check
Form I-9 and E-Verify
Credit Check (special Credit Report for employers)
Social Security Number Scan/Trace
so no they won't check for your stock income
