If you wait a few days they'll be even sweeter, though, because starches convert to sugars as they ripen. Or, if you don't want to wait, bake them, IN their skins, at 350 F for 10 minutes. That speeds up the sugar conversion process. You don't want them too brown. They do go rotten at a point. However, you might need more than three.
