I didn't mean to follow them but I unfollowed them in the same second and blocked them pretty much straight away. Will they ever know that I followed them??

Unless they have text notifications or saw it in their notifications on twitter, then no. But I wouldn't stress about it. Like why are you blocking them? I always unfollow people. I sometimes even in follow my friends because they're so annoying and irrelevant on twitter hahaha.
