For what purpose? Apps can be games, social websites, music services, movie services, magazines, productivity tools, etc. Your question is like asking: "What are the best things?" Without knowing what kind of Apps you're asking about, you make it impossible to answer your question.

Obviously it depends on your needs and interests, but some of my favs are:

Soundhound: Identify songs on the radio (Shazam does that as well).

Dolphin Jetpack: Very fast browser.

A flashlight app:

Amazon's app store app: I don't buy their apps but they offer a free app of the day, everyday..some are worth having.

App2sd: If you don't have much storage memory on your phone this is a life saver - moves apps to your SD card (android only).

Current Caller ID: Will tell you who is calling even if they are not in your contacts.

Lookout: Virus protection and phone finder

Pocket: Save any web page articles for later on your phone - accessible even if you are not online.

Flipboard: one of the many news/social media agregators. Easy interface makes you able to check some of the most popular sites all in one app.
