I think on the old one (from when they changed it a few weeks ago) you could only see who visited you if you both used one of those third party apps, if even. Is the new profile any different? Can I Facebook stalk without worrying that someone will see?

you can't now and you couldn't with the older profile
all third party apps claiming otherwise are bogus

Facebook doesn't allow people to track who views their profiles or contents. Third party applications are also are unable to track anybody.
