I have this ex boyfriend that posts stuff about other girls and I'm getting really tired of seeing it on my news feed so if I go to my friend list and uncheck where it says "show in News Feed" for his profile is he gonna know I took his updates off my news feed?

No, it does not inform them at all.

Nope it doesn't matter if you want their updates or not, they will never know either way.
