everytime a person deletes me my facebook automatically follows them ?

when you send a friend request, you are automatically following them, before they even approve the request
and when they remove you as a friend, you are still following them... that's just how it works
if you dont want to follow them anymore, then just unsubscribe from their updates
as shown here
