Like my "Fans page" where I post news and stuff with my nickname, I don't want people to know who I really am, for obvious reasons. If so, how can I disable this, so that my page has no connection to my profile?

No one can know who is the owner of the page. And who is posting a post.
Because, you are posting as the page.
You can happily use the page without knowing anyone.
But, if you invite your friends to the page, they will come to know.
And, if you add anyone as admin of the page, they can see you...!
