BTW there is a new feature called 'seen by x number of people' and it might be possible for others to know if I've been looking at their profiles as well.
I'm not even sure how this seen by... thing works. Do I have to click on their post for it to count or is simply scrolling over it counts?

no. they cant. but if someone has hacked into your computer then cant say. otherwise impossible.

There is no way to find out who looks at anyone's profile. Any app that claim there is a way is a scam.
