So my mom got a email from someone and it said this email is being sent to specific people so don't forward it. She of course forwarded it to me cause it was for me. Later they didnt need me anymore. So my question is did they know my mom forwarded it to me?

No, they can't see what happened to the email after it was sent to whatever recipients were there, unless they had trojans as a payload inside the email and you activated the trojan by, say, running the attachment(s) of the email.
