If you had seen a message but don't the other person to see it as "seen" can you just read it and then mark it as unread ? Does it still appear as "seen" to the sender ?

yes, that is what "mark as unread" means
however, there is a trick to it... if the person is basically watching your every move, you will want to wait at least 12 hours before actually reading it and then marking it as unread, because the person might be watching very closely and see the time you read it, and then notice that the time goes away... thus knowing that you are using this "mark as unread" trick
so it doesnt work very well if you have stalkers
