Will the privacy settings remain as they are when the new format comes in? Or will they have to be reset from default settings? Also, can we simply opt out of the new features (none interest me).

Your privacy setting still remain the same, at least for me it's still intact, although some people say no, but I'm not sure about that since people tend not to recall/understand what they did; to make sure, just check that all yourself, as you also might want to change some.
New feature launch by FB is where you have to cope with, no escape from that.
