okay so I post alot of things on my GFs wall and people keep giving me shit lol. so how can I make it so that NONE of my friends see what i post on her wall??

Aside than using Message, this way, your conversation is collected in one place, easy to track & compile; there're ways to communicate 'secretly' just between the two of you.

What you post on her Timeline is ruled by what she set the audience setting. If she set "Who can see what others post in your timeline"* to Only Me, then only she who sees that. But this will affect to everybody.

* It's in https://www.facebook.com/settings?tab=timeline

However, you can post in your own timeline for only she who can see it, by clicking the audience setting on the bottom of your status update box, then click Custom & fill in the place for who can see it, with her name.

You also can create an album with the privacy setting fill in with her name (type her name & see until her name appear in blue, then click on it), so only she & you who can see that album & the content thereof.

send her private messages instead - that's the only way, other than adding all of your friends to your restricted list
