Ok my question sounds a little weird but I just wanted to know if I were to follow someone would they get like a notification saying that I followed them or would it pop up in like a notification thing or on their profile

All three, actually. If they are a private account, they will have to approve of you first, so they will always know who you are if you follow them. If not, it would just say that you followed them in their feed as well as the little orange message box at the bottom right corner of the app.
