I said some stuff that i shouldn't have on facebook chat like three years ago, and my friend is telling people, so how do i delete the facebook chat for both of us. will it work if i block him and then re friend him?

the conversation would have to be deleted from his account. that's about the only way.

Unless he deletes the things you sent him, there's no way of deleting them. Or unless you know his password, then you can get into his account and delete them.
