I am planning to launch a blog in the winter next year. I would like to know how many posts should I have live on my blog when I launch the blog.

In my honest opinion, at least four or five post. I started out with just one but I tend to update my blog daily so you might want to think about how often you plan to update your blog to figure out how many you plan to start with.
