If I have them on my contact list but they don't have me on their contact list and I click on them to see their last seen, will they know?

Hey! The short answer is, nope, they won't have a clue that you opened a chat window with them to see when they were last seen online.
Even the messages we send that are marked with the one and two ticks do not accurately represent when the message was seen. I have experimented with this feature using a number of devices with friends and have found that the second tick often appears even before my friends open my message.
