is there a way to not let a person put they are in a relationship with you on facebook? some crazy chick put that she is in a relationship with me and we aren't even dating or anything.

usually you have to approve being in a relationship. just unfriend her and block her.

You would usually get a relationship request. Just deny it and it won't show up on either of your profiles.
