Whenever I like something, everyone sees "XXX liked XXX's status/photo/etc" I don't want some specific people to see this. Is this possible on Facebook?

you can't , facebook policies, either remove them from your freinds list , or let them know watever you are doing if they really care about it.

You have to block them. you cant not let them see things from one individual status though
