So I was stalking this person on Facebook and then I accidentally liked one of their posts they made long ago. I then immediately unlinked the post and unfriended the person. Does the person still get notified about me liking their status?

Yes... although when he/she checks, they wont see anything.. maybe if your lucky he/she will just think it was a slight facebook glitch or something.
