I want to add this guy who I'm interested in dating.
Will he be able to see any past posts and stuff like that or only that which I put up from the moment he's added going forward?

He can see everything. Past and future. Just go through and delete all your posts. I do it at least one time a year.

he will everyone of your post. but you can change it in your privacy in settings

Yes, they can see it, so change the audience of the post you want hide to only me

Yes they can as long as those post are shared with your "friends" or in public.
