A lot of people are bothering me on facebook recently and honestly I just use it to talk to one person. I was wondering if there was a way to appear offline to everyone on my friend list except for one person.

yeah now we the option to be online for certain people

Yes,
go offline first (in chat)
Select the Options icon in Chat (gear icon)
Select Advanced Settings...
Select "Turn on chat for only some friends"
Choose friend(s)
done
