First of all can instagram users see your email that you used to sign up for instagram? Secondly, there are pages like 'Fred Perry Official' (clothing brand), they say share our page then we will email you with a prize. How do they get your email, or is this a scam?

Nope. No one will be allowed to see your email unless you type it into your bio
Could be a scam or if you win they will ask you for your email which will make it public when you respond back

A normal user can't see your mail. I don't know what you mean with pages because if I remember well there aren't pages on Instagram.
