I think you're REALLY over-thinking this, people do that sort of thing all the time! and the fact that she seemed that distraught that you were upset with her seems to say she doesn't view her actions as hurtful until you mentioned it to her- She clearly cares for you, maybe just let her know for future reference that you are upset with it and she'll avoid it- however it is possible that doing such things could make her feel as if you're trying to control her- it depends on the personalities of both you and your girlfriend, You're probably the best person to make the decision here.
