How to get my parents to trust me, and let me learn from my own mistakes?

The fact you want to make mistakes proves your immaturity, it's good to learn but better to avoid when possible if you already know or are able to think as the losses, the past can't be reversed, you may or may not admit/regret but you'll suffer if get it wrong. If you want them to trust you and full freedom to make your decisions, you're supposed to obey until you're self dependent financially and legally. Right now, if you get hurt, they are responsible, so they have this authority. Just talk to them if they restrict your freedom, ask if the things you want to do pose any threat to you or others, be logical, explain, give your opinion and accept their decision.
