I think he was probably shocked to recieve an invite and it took a minute to sink in because he couldn't believe it and then when you added 'just as friends' he re-evaluated the offer. At first he was surprised and nervous that you would ask him meaning you like him in *that* way but then he believed it was just a friendly date and it didn't mean to you what he wanted it so mean so he quickly analysed the situation and decided he would still like to go as just friends not more than friends, but I bet if you'd not added as friends you could be looking at a new boyfriend.
