On Facebook, as you're typing a post, there should be a button below where you can select who can see it. Choose Custom and you'll be able to select who you don't want to see the post.
If it's an app though, go to Account Settings>App Settings. Choose the app and beside "App activity privacy" will be the same button that will allow you to select who shouldn't see posts from it. In your case, I guess Twitter would be the app.

Dunno about your Tumblr problem though. Sorry 'bout that.
