I did the same things too actually and keep wondering if this guy know I've been stalker him all this time. If you add him as your friend probably he knew about it because there is one application in facebook which allow people know who view your profile. Otherwise, if you just view his profile without add him, I think he don't know. It is normal to change the privacy setting in facebook.
