She may be a person that likes more personal communication. If you are attracted to this person, I from your question I would say you are, try this: Instead of trying to get her into a texting conversation, just call or text her and see if she wants to go get some coffee. Use her response as a way to gauge her interest. If she goes, use that get together as a springboard for a "real" date. At the least it will show your interest.
