Hi Helen!

I've been noticing a similar problem (and yes i'm slightly obsessed with the number of friends i got too) on my account. It's not as huge as yours but i noticed that my friends list keeps changing by 1. For example, i'd have 312 friends at one moment and 313 friends at the next moments, and it keeps changing like that!

You're not the only one experiencing this problem, I've noticed and answered several Facebook questions like these! It's perfectly normal actually, you just gotta know who your real friends are and if you should trust them or not.
