That's totally awesome you're even taking the time to respect her choices like that, I think for a first date taking her to a restaurant/cafe that has vegan and non vegan food is great, and say to her "would you prefer it if I ordered vegan too?" And gauge her response because some vegans honestly don't mind. But I bet you score points for not only asking but choosing a place that has vegan options for he (and I don't just mean a salad!)

Even if she says no it's fine, I'd still have a look at the vegan menu and see if anything takes your fancy, And give it a go

Plus there's a better chance of a kiss at the end if you don't smell/taste like meat!
