Why does my ping change so much ?

It depends on how busy the Internet servers are where your ping travels. Your ISP servers get relays from Internet servers that are overloaded so they reroute your ping to the best other option available which may be a server farther away than most of your pings.

The registry on your ISPs DHCP server sends your ping to the nearest server available. If that server is busy then it lets your ISPs DHCP server know that and then your ISPs DHCP server tries the next closest route. If that Internet server is also very busy then the process repeats. All of this back and forth communication takes time until finally a viable route is found and your ping arrives at it's destination. This all happens at the speed of light but the delay is the processing time inside each server involved.
