You can install Chrome, or Firefox, or even both. This does not affect the settings of your automatic updates, but if you want to manually update without the browser, use the Action Center in Control Panel.

You cannot uninstall Internet Explorer, but you don't have to use it.

The internet not responding is an entirely separate issue. You might have a problem with a plug-in for IE or your network connection, or something else. Hard to tell, since your description of the crashes didnt have detail.
