I know you dont want to come off rude but in the first place if you wanted to block and unfriend them,why do you care what they think? If you see them again or something..just say you've deactivated your fb or something.hope it helps.:/

Btw they wont see you at all if you have blocked or unfriend them,so no worries.Unless they make another account and look you up.Then they will know.

P.S. Its 4 am and I havent gotten any sleep so sorry if im not making any sense. JUst trying to help out.
