She gave you an honest answer. I'd guess she was drunk or high and acted on impulse, then got scared about the impact being lesbian would have on her life and panicked.

Leave her be, let her come out at her own pace. You can't rush somebody else's process and all you're likely to do is scare her away. Tell her that when she's ready, you're still interested -- and then stop pushing.
