If you've repeatedly told her not to do it and she still does it, you can always delete her. She may be too sensitive about things, but you also have a right to a relative amount of privacy, even on Facebook. Maybe you could explain to her that you like to keep your conversations private and give her a warning before just deleting her, then let her know that you've asked kindly and if she doesn't respect you enough to comply, you will then delete her. Simple.
