What do these two signs mean (< >) mean on twitter ?

They are inequality signs to represent if something is greater or less than something else. e.g.

Coca cola > pepsi

that means the coca cola is greater than pepsi or

pepsi < coca cola

which means the same thing, the big part means the greater than and the small part means less than
