If they actual care enough about it they usually outsource to a data collection firm that uses whatever of your personal information they have at their disposal and use various search techniques to find out more.

Just because you have your page settings as private, any other user that mentions you or any posts you make on a public page will still be visible.

There are small businesses now that are paying high school kids cash in hand to do this for them.
