I am a bit shy when it comes to stuff like this...

I don't want to on Facebook or text her as it will show up that I'm shy.(yes I've got her phone number..)

Since you're shy, I would go with a more subtle ask-out. Instead of the blatant 'will you go out with me?' First start up a conversation, and if things go well, casually ask her to the movies or out to lunch. I.e: "Hey, I was just thinking/if you're not busy... Do you wanna catch a movie with me this weekend?" Be cool and relax. Chances are she's into you anyway
