How to know when to text a guy first?

So this cute guy who comes to my work randomly texts me here and there and sometimes he messages me on Facebook. He usually flirts a little but we always text till late at night and then he just never replies at one point. Not sure if he's interested, when should I text him first?

Text him at night when you finish dinner because when people are done eating, they tend to rest and check their social media and text people back.
