Facebook - if you send someone a friend request and they don't accept it can they see your wall etc?

By wall do you mean your timeline? They can if they want to but not everything. You can change this in you privacy settings though. Within privacy settings there are various other settings such as "Who can see my stuff" which you could try making a few changes to.

If your timeline privacy setting is set to friends only, they won't be able to see your timeline unless they accept your friend request. If however, your setting is set to public, anyone, including people you haven't sent friend requests to, can see your posts.
