What does it mean when someone puts 1-2 X's after writing something?
I see a lot of people on Twitter and Tumblr who will write something, and then put xx at the end, or some times just one x. Does it symbolize something?

It was originally shorthand for a kiss, used in handwritten letters. More generally, it's a sign of affection and friendship.
