If I block certain people from seeing my relationship status on facebook, should the relationship end or be "cancelled" by my significant other...will it still appear in their news feed?

Your privacy controls only control your pages, not the pages of others. Facebook is a social site that gives the users privacy control over their pages, not a tool to help someone trick someone else into thinking they have ended a relationship.
