On Family Safety what happens when I delete a family member?

It depends on what family safety application/software you are using

As a suggestion - have you 2 or more family members with different settings/restrictions?

If not then create a dummy account and test it - maybe create a 2nd dummy account and test them both to check the difference in restrictions then if it works delete one of the dummy accounts and check again

If yes I would assume if they have different settings it would be ok to delete - but if I wasn't sure I would test the application as above
