As you said, she can have whomever she wants to have as a friend. If you don't want this guy to see what you're up to and what you post on her wall, block him. That way he won't see you.

I would! Like you, my whole life revolves around facebook. Me and my wife have been happily facebook married for 9 years now! I almost unfriended her because she liked a picture of Ryan Gosling but decided not to because of the commitment we made at our facebook wedding. If we were still only facebook dating at the time i would have unfriended her!
